Default Rose Mango Delight

A soothing of the soul, this rose mango dessert.

1 1/2 cups of half-ripe chopped mango (preferably Rose mango)
1 cup of granulated sugar
1/2 cup of flour
1 egg
1/2 tsp. of vanilla essence
1 tsp. of baking powder
1/2 cup of chopped walnuts
1 pinch of salt
1/2 cup of grated coconut (preferably young and fresh)

1. Combine mango, 3/4 cup of sugar, vanilla essence, flour, baking powder, chopped walnuts, egg (beaten), pinch of salt and mix thoroughly.

2. Put combination in a greased 8" pie plate; sprinkle with coconut and remaining sugar.

3. Preheat oven to 350 degrees F and bake for 35 minutes.

Note: Best served with whipped cream, ice cream or custard sauce.
