Default Caribbean Creole Rice

A traditional Caribbean rice dish with aroma to die for.

1 cup of parboiled rice
1/4 lb. of bacon bits
1/2 lb. of cubed tender beef
1/2 cup of onions
1 cup of chopped green sweet peppers
1 cup of chopped red sweet peppers
1 tsp. of salt
1/4 cup of tomato paste
1 tbsp. of peanut butter
2 1/2 cups of beef broth
1 tbsp. of minced garlic

1. Cook bacon in skillet on medium heat for a 5 minutes.

2. Add beef, onions and garlic and saute for 2-3 minutes.

3. Add rice and stir thoroughly for a minute.

4. Thoroughly stir in peppers, peanut butter, broth, tomato paste and salt.

5. Bring to boil, lower heat, cover and simmer until rice is properly cooked and beef is tender (30-35 minutes).
