Any ideas on what to do with leftover chic-
ken enchiladas? Not make some with left-
over but the leftover enchiladas themselves.
Don't want to reheat them, make a casserole
with them. Want to use them to make some-
thing else with them. Cut them up and make
stew or soup or...?

cut in sections, dip in egg, coat in panko, deep fry
