Snapper In a Scallion and Ginger Sauce
Ingredients * 3 cups of chicken broth * 1 large tomato, diced * 4 fillets of snapper * 1 2-inch piece gingerroot, grated (about 2 tbls.) * 20 scallions * fresh cilantro leaves, for garnish * 1 lemon, peeled and diced Directions In a medium saucepan over high heat, bring broth to a boil. Meanwhile, place fish fillets in a large shallow saucepan. Blanch whole scallions in boiling broth for about 20 seconds. Remove scallions. Place them with lemon and tomato on top of fish. Sprinkle with ginger. Place fish sauce pan on burner on high heat. Pour boiling broth over fish. Once liquid returns to boil, lower to medium heat and simmer until fish is cooked through, about 6 minutes. Remove from heat. Garnish with cilantro leaves and serve immediately. Serves 4. |
