BBQ Baby Octopus
 
BBQ Baby Octopus



1kg Baby Octopus

300mls water

1 cooking spoon of garlic

1 tsp baking powder

150g butter

50mls cream

1 tbsp worcestershire sauce

1 tbsp lemon juice

2 eshallots

Splash of Cognac



Marinade:

300mls olive oil

1 lime

1 lemon

Salt & pepper



Method:

Place the octopus and garlic in a pot with water and bring to the boil. Add
baking powder and simmer for 40 minutes.

Prepare Marinade:

In a bowl add 300mls olive oil, juice of one lemon & lime. Salt, pepper and
the lemon and lime wedges. When octopus is tender rinse in cold water. Place
in the marinade and leave overnight.

Then grill on a hot plate till lightly coloured.

Flambé cognac in a fry pan, add the butter and slowly melt, whisking
constantly. Add a touch of cream and worcestershire sauce and whisk till
they're all combined. Finish with shallots.



Serve on a bed of rice with the cognac sauce poured all over.
