Default Lady Baltimore Cake

Lake Baltimore Cake

Cake:

1 box. Duncan Hines white cake mix
or
Basic white cake

Filling:

1 1/2 cups sugar
1 cup water
2 egg whites
1 cup nuts, chopped
1 cup raisins, chopped
8 dates, chopped
1 cup marshmallows
1 cup citron

Cake: Bake as directed on package. Cool, then fill and frost. Filling can
be
used as frosting too.


Filling: Combine water and sugar. Cook until soft ball stage or 240
degrees on thermometer. In separate bowl beaten egg whites until stiff.
Put marshmallows in hot syrup. Stir until melted. Pour over egg whites
while still hot. Beat until creamy. Then add nuts, raisins, dates and
citron. Fill and frost cool cake.

Cake can be decorated with candied fruits or gumdrops. A boiled white
icing (7 minute frosting) may be used if preferred. Wrap and store in
refrigerator.
