Curried Carrot-Raisin Salad
Yield: 3 1/2 cups 1 cup mayonnaise 1 1/2 teaspoon curry powder 1/4 teaspoon salt 4 cup grated carrots (about 1 pound) 1/2 cup raisins 1 can (8 ounce) crushed pineapple in own juice, drained In small bowl, combine mayonnaise, curry powder and salt. Set aside. In medium bowl, combine carrots, raisins and pineapple. Add dressing and mix well. Serve immediately or cover and refrigerate until serving.
