Rosemary Roasted Potatoes

3 pounds small red potatoes, or Yukon Gold or any combination, cut in half
2 tablespoons good olive oil
Salt and freshly ground black pepper
2 large cloves garlic, crushed, peeled. chopped,
or
1/2 teaspoon garlic powder NOT garlic salt
3 long sprigs fresh rosemary

Preheat oven to 425 Degrees F.
Place potatoes in single layer in baking dish, making sure they are not
crowded. Drizzle with olive oil, then sprinkle with salt, pepper and
garlic.
Toss
to coat well. Turn potatoes so that cut sides are facing down in the
baking
dish.
Place rosemary sprigs on top of potatoes and roast for 20 minutes. Do not
turn during this time.
Remove potatoes from oven and carefully remove rosemary sprigs. With
spatula,
turn potatoes over, then top with rosemary, and bake 20-25 minutes more.
Remove from oven, discard rosemary, and serve.

Rosemary Garlic Roast Potatoes

10 Medium Potatoes
4 Cloves Garlic, crushed, peeled
4 tsp Dried Rosemary, crushed
140 ml (1/4 pint) Olive Oil

Scrub potatoes, do not peel and cut into four pieces. Steam for ten
minutes.
Preheat oven to 190 Degrees C: 375 Degrees F: Gas 5
Add potatoes to a baking pan/tin, with olive oil, rosemary and crushed
garlic. Shake to coat thoroughly. Roast for 30 minutes. Serve immediately.

4 to 5 rosemary sprigs
1 1/2 tablespoons good olive oil
Salt and freshly ground black pepper to taste

In a jelly-roll or large baking pan, toss potatoes with rosemary and oil,
season with salt and pepper, to taste, and roast in the middle of a
preheated

degrees F. oven, stirring once, for 30 minutes.
