Sirloin Ribbons and Pineapple Chunks
 
Sirloin Ribbons and Pineapple Chunks

Yield: Serves 4

1 1/4 to 1 1/2 lb. boneless beef sirloin steak, cut 1" thick
1/4 cup soy sauce
1/4 cup water
3 Tbsp. fresh lime juice
1 tsp. sugar
3 cloves garlic, minced
24 cubes (1"x1") fresh pineapple or canned pineapple chunks

Partially freeze beef sirloin steak for 30 minutes to firm; slice into
strips 1/8 to 1/4" thick. To make marinade combine the soy sauce, water,
lime juice, sugar and garlic. Place beef strips in plastic bag or utility
dish; add marinade, turning to coat. Tie bag or cover dish and marinate
for 20 to 30 minutes turning occasionally. Meanwhile soak 8 - 12" bamboo
skewers in water for 10 minutes. Pour off marinade. Alternately thread an
equal amount of beef strips (weaving back and forth) and 3 pineapple cubes
on each skewer. Place kabobs on grid over medium coals. Broil 4 minutes,
turning once.
