Cole Slaw
or Rather, Cold Slaw

1 small head cabbage, cored, shredded small
Ice water to cover cabbage with

Shred cabbage and soak in ice water (refrigerated) several hours before
mixing. Drain well.

Add other ingredients:

1 Bell pepper, cored, seeded, chopped fine, optional
1 small sweet type Onion (Vidalia, Bermuda, etc.), peeled, chopped fine
1 small jar chopped pimento, drained
1 ripe tomato, peeled, chopped
1 Tablespoon salt
2 Tablespoons granulated sugar
1 Tablespoon French's Prepared Mustard (mild)
2 Tablespoons Apple Cider Vinegar
Several dashes Paprika, to add color
1/2 teaspoon Celery Seed or Poppy Seed, optional
2 Tablespoons Mayonnaise, optional

Mix thoroughly. Cover and refrigerate again.

Serves 6.
