Quick Cajun Flavours Chicken and Shrimp Stew With Okra and Tomato
2 chicken breasts, cooked and diced 1 can (15 oz) stewed tomatoes, (Hunt's) 1 can chicken broth (12 oz) undiluted (Campbell's) 2 Tbsp lemon juice 2 tsp Tomato-chicken bouillon powder (Knorr's) 1 cup frozen sliced okra 1/4 cup long grain rice (not "Minute" rice) 1 cup frozen cooked "salad" shrimps (small size) 2 bay leaves 1 tsp file powder Generous splash of Tabasco 1 tsp minced garlic 1/4 tsp black pepper Salt to taste Though I will accept criticism for using both okra and file powder together in this, it is, after all, a "quick fix', not authentic, and the addition of file powder adds much to the flavour. Combine the broth, chicken, tomatoes, garlic, bay leaves, garlic, bouillon powder, Tabasco, and lemon juice. Bring to a strong simmer. Add the frozen okra and return to a simmer. Add the file powder and rice; allow to come to a strong simmer, reduce heat and simmer until the rice is cooked.
