Irish Potato Stew
 
Irish Potato Stew

8 potatoes, peeled and coarsely chopped
1 onion, diced
4 carrots, scraped and cut into 1/4 inch slices
1/4 cup bacon grease,
1/4 cup plain whole white flour
salt and pepper, to taste
boiling water

Peel potatoes and cut coarsely.
Get a heavy frying pan hot, add the bacon grease (get it hot to almost
smoking). Sprinkle the flour around in the grease slowly so as to get the
flour cooking without it sticking together.
Brown to a light brown consistency.
Most important:
Watch and the stir the cooking flour as this is done under high heat and
the flour Will burn if you don't watch it close!
Do not burn, if you see black specks, start over.
Brown one onion in the mixture.
Add potatoes, carrots, and flour mixture to boiling water.
Add salt and pepper to taste and let cook until vegetables are tender.
Servings : 6
