Spinach In Onion Shells
1 (10 oz.) pkg. frozen chopped spinach; cooked and drained 1 (3 oz.) pkg. cream cheese, softened 1 egg, slightly beaten 1/2 c. soft bread crumbs 1/4 c. freshly grated Parmesan cheese (may substitute freshly grated Romano cheese) 1/4 c. milk 1/4 tsp. salt Freshly ground pepper 1 lg. flat onion Preheat oven to 350 degrees. Squeeze spinach to remove all excess moisture. Beat cream cheese and egg in medium sized bowl until light. Add bread crumbs, cheese, milk, salt and pepper. Mix well. Stir in spinach. Cut onion in half from top to bottom. Separate layers to form shells. Place in 9 inch square baking dish. Spoon spinach mixture into shells. Cover baking dish with foil. Bake at 350 degrees for 35 to 40 minutes or until onions are tender and filling is set. Serves: 5. Preparation: 25 minutes. Baking: 35 minutes. Temperatu 350 degrees.
