Irish Bread Pudding with Whiskey Sauce
 
Irish Bread Pudding with Whiskey Sauce

Yield: 6 to 8 servings

1/2 cup raisins
1/2 cup Irish whiskey
5 eggs
2 cups heavy cream
1 cup sugar
1/2 tsp vanilla
1/4 tsp nutmeg
8 to 9 slices firm white bread
4 Tbsp butter softened

Sauce:
1 stick butter
1 cup sugar
6 Tbsp heavy cream
1/4 cup Irish whiskey

Pudding: Soak raisins in whiskey for 1 hour. Butter a 9 inch non metal
baking dish. In bowl blend: eggs, cream, sugar, vanilla and spices.
Butter one side of bread with softened butter. Cut slices diagonally.
Arrange 1/2 bread in dish overlapping pieces. Drains raisins and sprinkle
1/2 over bread. Repeat with remaining bread and raisins. Pour over
custard and soak for 30 minutes.Then place dish in a water bath and bake
400F for an hour or top is golden and set. Remove dish from water bath and
cool on rack. Make sauce: Melt butter in saucepan, whisk in sugar and
cream and whiskey . Simmer low until sauce thickens. Pour sauce over
individual pudding portions.
