Chicken And Grape Salad (With Green Beans)

1/3 cup olive oil
2 Tbsp tarragon vinegar
1 Tbsp Dijon mustard
1 Tbsp chopped tarragon
1/2 tsp salt
1/8 tsp pepper
1 head lettuce, separated into leaves
2 cups cubed cooked chicken
1/4 pound green beans, blanched
1 1/2 cups grapes, halved

In bowl, whisk together first 6 ingredients. Arrange lettuce around
serving platter. In bowl, toss chicken with 1/2 dressing. Mound chicken in
center of platter, arrange beans and grapes around chicken. Drizzle with
remaining dressing.

Makes 4 servings.*
