It's been so long since I've made pastry that I'm not sure what kind
of fat to use. Lard used to make excellent pastry for meat pies but
it's nutritionally incorrect today because of saturated fats.

Vegetable shortening was next but it's just as bad if not worse with
its trans fats.

Saw a pastry recipe using canola oil but somehow it sounds like I
wouldn't care for the results. The no-trans fats margarine I use is
soft margarine and could produce pastry more like a cookie or biscuit
than actual pastry.

Help! Which fat should I use?
