Sweet Potato Casserole
 

Sweet Potato Casserole

(my sister served this at Christmas, fantabulous)

3 cup Mashed Sweet Potato
1 cup Sugar
2 tsp vanilla
2 eggs, beaten
1/2 cup (1 stick) Butter, melted

Mix together all ingredients and place in a 1 qt. casserole dish

Topping

1 cup brown sugar
1/2 cup Butter
1/3 cup flour
1/2 cup Nuts (walnuts or pecans)

Cut butter into brown sugar add flour then nuts, sprinkle on top of
sweet potato mixture.
Bake in 350 F oven and cook for approximately 20 minutes. Check
that all the topping is melted and slightly bubbling. Serve and enjoy.
