Different Chicken Divan

2 cups cooked, cubed chicken breast meat
1 pound fresh broccoli flowerettes, cooked and drained
1 cup mayonnaise
1 Tablespoon curry powder
1/4 teaspoon red cayenne pepper
pepper to taste
2 1/2 cups shredded Cheddar cheese, divided
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 (6 ounce) can French-fried onions

Preheat oven to 350 degrees F (175 degrees C). Spread chicken in the
bottom of a 9x13 inch baking dish. Top with broccoli. In a medium bowl,
combine the mayonnaise, curry powder, cayenne pepper, and black pepper and
mix well. Add 1 cup of Cheddar cheese, cream of chicken soup and cream of
mushroom soup and mix again, then pour mixture over chicken and broccoli.
Sprinkle with remaining 1 1/2 cups of cheese. Top with French-fried
onions for last 10 minutes of baking.. Bake at 350 degrees F (175 degrees
C) for 35 minutes Serve the Chicken Divan over rice.


Chicken Divan

3 or 4 deboned chicken breasts
2 cans cream of chicken soup
1 tsp. lemon juice
1 cup sharp American cheese, shredded
2 (10 oz.) pkgs. frozen broccoli
1/2 cup soft bread crumbs, mixed with 2 tsp. melted butter
1 cup mayonnaise

Simmer chicken until tender. Cook broccoli in salted water, drain. Arrange
broccoli in greased casserole dish. Place halved chicken breasts on top of
broccoli. Combine soup, mayonnaise and lemon juice. Pour over chicken.
Sprinkle cheese and bread crumbs on top. Bake at 350 degrees for 25
minutes. Prepare rice or potatoes for 6 people and serve.
