Date Nut Loaf Cake

"An easy and quick date nut loaf served with a warm brown sugar
sauce."
Original recipe yield: 1 - 9x5 inch loaf pan.

Prep Time: 20 Minutes
Cook Time: 1 Hour
Ready In: 1 Hour 30 Minutes
Servings: 12

1 cup dates, pitted and chopped
1 cup water
1/2 cup butter
1 cup white sugar
1 teaspoon baking soda
1 1/2 cups all-purpose flour
1 egg, beaten
1 teaspoon vanilla extract
1 cup chopped walnuts

1/4 cup butter
1/3 cup heavy cream
1/2 cup brown sugar

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5
inch loaf pan. In a saucepan over medium heat, bring dates and water to
a boil. Stir in 1/2 cup butter and 1 cup sugar until melted. Remove
from heat and stir in baking soda. Let cool for 10 minutes.
Place date mixture into a large bowl. Blend in flour, eggs and vanilla.
Stir in chopped walnuts. Pour batter into prepared pan.
Bake in the preheated oven for 50 to 60 minutes, or until a toothpick
inserted into the center of the cake comes out clean. Let cool in pan
for 10 minutes, then turn out onto a wire rack and cool completely.
Serve slices with Warm Sauce.
To make Warm Sauce: In a saucepan over medium heat, combine 1/4 cup
butter with cream and brown sugar. Heat, stirring constantly, until
mixture boils and sugar is dissolved.

Divine Date - Nut Loaf

4 eggs
1 cup sugar
1/2 cup oil
1 cup sifted flour
1 lb. chopped pitted dates, about 3 c.
4 cup pecan halves

Beat together the eggs, sugar and oil. Add the dry ingredients and mix
together well.
Pour into a greased and floured loaf pan (9x5x3-inches) and place in a
cold oven. Turn on the oven to 300 degrees and bake for 1 1/2 to 2
hours, or until cake is firm in the middle.

Let cool completely. Remove from pan and slice with a very sharp knife.
Or, wrap and freeze for slicing and serving later. You will enjoy this
chewy date-nut loaf as a snack, at parties, for dessert or any time you
want to serve something delicious. Makes a 3-pound loaf.

Date Nut Loaf

3 Tbsp. white Karo syrup
3 cup sugar
1 cup milk (evaporated), 5 oz. can + water
1 (16 oz.) pkg. dried dates
2 cup nuts

Dissolve sugar and syrup in milk and cook to soft boil stage. Add
chopped dates. Cook until mixture thickens to a firm ball stage when
tested in water. Remove from heat and beat until cool and creamy. Add
nuts. Place mixture in a long loaf shape on wet cloth. Shape into 2
inch long roll, chill until firm. Cut into slices and store in air
tight container.

Date Nut Loaf

2 lb. dates, cut
1 cup sugar
4 eggs
1 cup flour
1 Tbsp. baking powder
1 qt. shelled pecans

Sift flour, sugar, baking powder over nuts and dates. Mix well. Beat
eggs and pour over and mix. Press firmly into loaf pan. Bake slowly,
300-325 degrees for 1 1/2 hours.

1 (6 1/2 oz.) pkg. dates
1 1/2 cup boiling water
2 Tbsp. shortening
1 1/2 cup sugar
2 1/2 cup flour
1 egg
1 tsp. salt
1 tsp. soda
1 tsp. vanilla
1 cup nuts

Cut dates in quarters. Add shortening, and over this pour the water.
Cool. Add well beaten egg. Sift dry ingredients together. Add to date
mixture. Mix thoroughly. Add vanilla and nuts. Place in greased bread
pan (12 x 4 inches). Let stand 15 minutes. Bake 1 hour (longer time may
be required for thicker loaf) at 350 degrees.

1 lb. dates, chopped
1 lb. chopped walnuts
1 cup flour
1 cup sugar
2 tsp. baking powder
1/2 tsp. salt
4 eggs
1 tsp. vanilla

Sift dry ingredients twice, then sift over fruit and nuts. Add beaten
egg yolks. Add stiffly beaten egg whites and vanilla. Grease and flour
pans. (Use one loaf pan or three small ones.) Bake 1 hour at 275
degrees.

5 Tbsp. cold water
1 tsp. baking soda
3/4 cup brown sugar
1 tsp. vanilla
2 cup sifted flour
1 tsp. baking powder
1 tsp. salt (opt.)
1 egg

Put dates, nuts and butter in mixing bowl and pour boiling water over
them. Beat until butter breaks into small lumps. Add cold water, stir
in soda, brown sugar, vanilla and egg and flour mixed with baking
powder and salt. Beat until well blended. Pour batter into greased loaf
pan. Bake at 350 degrees for about 1 hour. Freezes well.
