Lime Vinaigrette

3 tablespoon Fresh lime juice
1 1/2 tablespoon Champagne vinegar
2 teaspoons Grated lime zest
1 tablespoon Minced garlic
2 tablespoon Chopped cilantro and/or mint
1 teaspoon Chopped ; seeded Serrano chile or to taste
1 1/2 teaspoons Toasted ground cumin
3 tablespoon Olive oil
Salt ; to taste
Freshly-ground black pepper ; to taste


Whisk all of the ingredients together. Can be stored covered in
the refrigerator for up to 3 days. This recipe yields about 1 cup of
vinaigrette.
