Mini Meatballs
Clam Pastry Pie
Mother's Favorite Old Fashioned Tapioca Pudding



Mini Meatballs

1 lb. hamburger
2 Tbsp. tapioca
2 eggs
Little salt and pepper
Few shakes celery salt
5 shakes garlic salt
1 Tbsp. prepared mustard
1 - 2 Tbsp. ketchup
1 chopped med. onion

Shape into meatballs; cook in oil about 1/2 hour. Keep turning until
brown. Remove from oil and put in hot spaghetti sauce. Put in hot dog buns
and sprinkle with cheese for meatball sub.


Clam Pastry Pie

1 cup chopped clams
1 (13 oz.) can evaporated milk
1 cup clam juice
1 lg. chopped onion
1 Tbsp. flour mixed with clam juiceto make paste
1 Tbsp. sugar
8 crumbled Royal Lunch Milk Crackers
Pie crust for top & bottom
1 Tbsp. tapioca

Mix all ingredients except pie crusts, sprinkle 1 tablespoon tapioca into
pie shell, add ingredients, top with 3 pats butter. Sprinkle with pepper.
Cover with top crust. Bake at 375 degrees for 1 hour.



Mother's Favorite Old Fashioned Tapioca Pudding

1/3 cup lg. size pearl tapioca (not instant)
2 1/4 cup milk
1/4 tsp. salt
2 eggs
1/2 cup sugar
1/4 tsp. vanilla

Soak tapioca in water for 4 to 12 hours. Add milk and salt. Heat and
stir until boiling. Simmer at low heat, uncovered, for 50 minutes, stirring
frequently. Add sugar gradually. Beat eggs. Mix with some of hot tapioca.
Return slowly to rest of mixture. Bring to boil, stirring constantly for 3
minutes to achieve pudding consistency. Cook 15 minutes. Add vanilla.
