Crunchy Crust Ice Cream Pie

Preparation Time: 10 minutes
Microwave Time: 1 minute
Freeze Time: 2 hours

Servings: 8

1 Tbsp butter or margarine
1-1/3 cups miniature marshmallows
3 cups POST Fruity or Cocoa Pebbles Cereal*
2 pints (4 cups) ice cream, any flavor, softened
*Or use 3 cups Post Golden Crisp Brand Cereal Puffed Wheat or Post
Alpha-Bits
Frosted Letter Shaped Oats and Corn Cereal.

Microwave butter in large microwavable bowl on HIGH 30 seconds. Add
marshmallows; mix well. Microwave on HIGH 1 minute or until marshmallows
are smooth
when stirred, stirring after 30 seconds. Stir in cereal.
Press cereal mixture onto bottom and up side of lightly buttered 9-inch
pie
plate, using greased hands.
Fill crust with ice cream; cover. Freeze about 2 hours or until firm. Let
stand at room temperature about 10 minutes before serving. Garnish as
desired.

Makes 8 Servings

Cherries Jubilee Ice Cream Pie

1 quart vanilla ice cream, softened
1 cup maraschino cherries, drained and chopped
1 chocolate cookie crumb pie crust
8 chocolate covered cherries
1 whipped cream

Add chopped maraschino cherries to ice cream and mix thoroughly. Pour ice
cream mixture into the pie shell. Freeze until firm.
Before serving. garnish with whipped cream and chocolate covered cherries.

Yield: 8 servings

This keeps well in the freezer.
