Grilled Ham and Sweet Potato Kabobs
 
Grilled Ham and Sweet Potato Kabobs


1 1/2 to 2 pounds cooked ham, cut in 1 to 1 1/2-inch cubes
2 1/2 pounds fresh sweet potatoes, cooked, peeled, and cut in 1 1/2-inch
pieces
1 medium green pepper, cut in 1 1/2-inch squares


Thread cubed ham, sweet potatoes, and green pepper squares alternately on
6 skewers. Brush kabobs with Apricot Honey Glaze (below). Grill over
medium coals for 15 to 20 minutes, on in a 350 deg oven for 20 t0 30 mins.

Apricot Honey Glaze


1/2 cup apricot preserves
1/2 cup honey
3 tablespoons lemon juice
1/4 teaspoon allspice
1 tablespoon cornstarch


Combine all ingredients in a small saucepan. Cook over medium heat,
stirring constantly, until thickened and clear. Makes about 1 cup of
glaze. Baste ham Kabobs during the cooking or grilling.
