Baked Onions

1 kg red or mild white onions, peeled and cut into quarters.
1/3 cup extra virgin olive oil
1/3 cup balsamic vinegar
1/4 cup raisins or chopped dried apricots
1/4 cup chopped walnuts

Put onions in oven dish, pour oil and vinegar over. Sprinkle with
raisins and nuts. Cover and bake 45 minutes at 200oC. Serve hot or at
room temperature.
