>From the kitchen of David Welton 4 to 6 medium sized potatoes (washed but unpeeled) 1 cup reduced fat grated cheese (Jack, Cheddar and/or Mozzarella), 1 cup small cubes of ham, Canadian bacon, turkey or other lean meat 1 can sliced olives (2 1/4 oz) 2 tablespoons olive oil salt and pepper to taste Wash potatoes then cut into thirds, leave skin on. Cook covered in microwave oven for about 6 minutes on high (rotate once if necessary). Potatoes should be only partially cooked; they should be hard and crunchy when stuck with a fork. Grate potatoes. Pre-heat olive oil in large frying pan on medium to medium-high heat. Place potatoes in an even flat layer in the pan. Cook uncovered until evenly golden brown on the bottom (apx. 12-15 minutes). Flip the potatoes over. Hint: It can be tricky to flip the potatoes while keeping the potato layer in one piece -- try using two spatulas. If the potato layer breaks don't worry, the layer of cheese and other toppings will hide the break. After cooking uncovered for apx. 10 minutes place cheese, olives, meat and whatever else you want on top of the potato pizza. Reduce heat to medium and cook covered until cheese is melted and bottom of potatoes is golden brown. Salt and pepper to taste. Serves 3-4.
