Fruit For Friendship Cake
Starter Friendship Cake 30 Day Amish Friendship Starter Friendship Cake-Amish Traditional Friendship Fruit Cake Fruit For Friendship Cake DO NOT use anything metal to stir with or metal containers. (This recipe is closest to what I remember, although I use 2 cans or jars of pineapple and cherries) Step 1: Put 2 cups sugar, 1 1/2 cups starter and 1 (30 oz.) can sliced peaches with juice in a glass gallon container; stir well. Leave on cabinet with lid loosely placed on the container (may pop off if too tight). Stir once a day for 10 days. Step 2: On the 10th day, add 2 cups sugar, and 1 (20 oz.) can chunk pineapple with juice. Stir once a day for 10 days. Step 3: On the 20th day, add 2 cups sugar, 1 (10 oz.) jar maraschino cherries with juice and 1 (30 oz.) can fruit cocktail with juice. Stir once a day for 10 days. Step 4: On the 30th day, drain liquid from the fruit and divide fruit into three parts. Divide the juice and put into tight glass containers (each container should hold approximately 1 1/2 cups). Makes between 4-6 jars of starter. Makes three cakes. You can use any type of fruit you like, I recieved recipes using peaches, pineapple, cherries, oranges, apples, fruit cocktail, apricots, pears, cranberries, and even grapes. Starter 21/2 cups sugar 1/4 cup brandy 1 8oz can peach necter (or apricot) no metal (I used peach brandy, about 1/2 to 1 cup according to preference, I used 1 cup ;}, and the sugar, and let it set about 10 days before adding fruit) Let set in jar on counter for 20 days Stirring each day, After 20 days Start with recipe below Friendship Cake This cake is a 30-day project, and can only be started with a gift of starter from a friend. During the 30 days, none of the recipe should be refrigerated. Place recipe in a covered container, maintain at room temperature. Do not use plastic or metal container, use glass or ceramic. Before it is ready to bake, contents will fill one-gallon size container. Cake can be frozen, but the fruit juice cannot, cake freezes well for 1 year. Follow instructions carefully: 1ST DAY: 1 1/2 cups of starter 2 1/2 cups of granulated sugar 1 large can of sliced peaches (chopped) and juice (30 oz. Can) STIR TOGETHER AND COVER WITH SARAN WRAP STIR ONCE A DAY, EVERY DAY. 10TH DAY Add: 2 cups granulated sugar 1 large can of chunk pineapple and juice (14 oz. Can) STIR ONCE A DAY, EVERY DAY. 20TH DAY 2 cups granulated sugar 1 large can of fruit cocktail and juice (30 oz. Can) 1 10 oz jar of maraschino cherries (chopped) and juice STIR ONCE A DAY, EVERY DAY. 30TH DAY Drain juice from fruit. Divided fruit into 3 equal parts This makes 3 (three) cakes Here is another starter and recipe using yeast: 30 Day Amish Friendship Starter Use a gallon glass jar; keep covered loosely with cheesecloth and let stand at room temperature. Stir each day or so with a wooden (non-metal) spoon. Add ingredients as direct. 1st day: 1 1/2 cups starter juice, 15 to 29 ounce can sliced peaches, with juice, 2 1/2 cups sugar 7th day: 15 to 20 ounce can chunk pineapple with juice, 2 1/2 cups sugar 14th day: 15 to 20 ounce can crushed pineapple with juice, 2 1/2 cups sugar 21st day 2- 6 to 9 ounce jars maraschino cherries, drained and quartered, 2 1/2 cups sugar 30th day: Use fruit for cakes or other recipes; divide starter juice and begin again. NOTE: This 30 day method makes an interesting recipe, but all fruits and the total 7 1/2 cups sugar may be added the first day if desired. Follow directions for in "Starting the Starter: for stirring and storing. If you don't have any starter, the following is the recipe to make it: Fruits as listed in the starter above, 2 packages dry active yeast, 7 1/2 cups sugar Put all fruit in a large mouth gallon jar. Sprinkle yeast over fruit. Add sugar. Stir with a wood (non-metal) spoon. Cover jar with cheesecloth and let stand at room temperature for 2 to 6 weeks, stirring every day or so. After this time, fruit and liquid may be put into pint jars and sealed for storage in the refrigerator. When ready to use, drain fruit and save the juice, this is the starter. Divide the juice into separate containers of 1 1/2 cups each. You will have enough juice to make 3 to 5 starter. The fruit and/or juice starter may be frozen for future use. After dividing the "working" starter into 1 1/2 cup portions, give each to a friend along with recipes. Recipe for cake: 1 box yellow cake mix 2/3 cup cooking oil 4 eggs 1/2 cup of fruit juice ( from reserved juice) 1 1/2 cups fruit, coarsely chopped 1 small box instant vanilla pudding 1 cup nuts Drain fruits and give the juice to friends for their starter(1 1/2 cups each). Mix ingredients together and bake at 350 in a bundt pan for 40 to 50 mins.(I used 9x13x2, 50 to 60 min) baking time can vary according to extras added and how wet fruit is. It's done when a toothpick inserted in the center comes out clean. There is enough fruit to do three cakes..Or if you prefer more fruit (I do) just divide the fruit in half and make two. You can also freeze half the fruit if you only want to make one at a time. variations: you can use different flavors of cake mix or pudding (Yellow cake with butter pecan or pineapple pudding; strawberry cake with French vanilla pudding; orange cake with coconut pudding; or banana nut cake with butterscotch pudding.) nuts, coconut, or raisins are optional To finish you can glaze the cake or add icing, cream cheese frosting is wonderful on it. Friendship Cake-Amish Categories: Cakes Yield: 8 servings 1 cup Butter/Margarine, Melted 1 3/4 cup Sugar 3 cup Unbleached All-purpose Flour 1 tsp Baking Soda 1 tsp Ground Cinnamon 1/2 tsp Salt 1/4 tsp Ground Cloves 1/4 tsp Ground Nutmeg 2 Large Eggs 2 cup Brandied Fruit 1 cup Chopped Pecans 1/4 cup Brandied Fruit Juice Combine butter and sugar in large mixing bowl. Beat well. Combine next 6 ingredients. Beat well. Add eggs. Coarse chop brandied fruit and stir into batter. Add pecans and juice. Mix well. Pour batter into well-greased 10 inch bundt pan. Bake at 350 degree F. oven for 1 hour. Cool in pan 10 minutes, then remove from pan. Traditional Friendship Fruit Cake 1 1/2 cups vegetable oil 2 cups sugar 3 eggs, well beaten 2 teaspoons vanilla 3 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1 cup chopped nuts 3 cups chopped Friendship Fruit, well drained Mix together oil, sugar and eggs in electric mixer. Add vanilla and beat well. Stir together flour, soda and salt. Blend into batter, then mix in nuts and fruit. Bake at 325 degrees in a greased and floured Bundt, tube, or 9-by-13 inch pan for one hour and 15 minutes or until cake tests done. Let cool 10 minutes before removing from pan. Serves 12. Amish Friendship Cake *Takes approximately 30 days to prepare* Initial Starter Recipe Day One through day 14 1 cup cubed pineapple (drained) 1 cup sugar 2 tablespoons brandy Combine in a glass gallon jar. Let set it set for two weeks. Cover loosely with aluminum foil with a wooden spoon inserted through the foil to stir daily-DO NOT REMOVE FOIL OR SPOON! Be sure to stir daily. Day 15 Add 1 cup maraschino cherries including the juice 1 cup sugar 2 tablespoons brandy. Let set two more weeks, stirring daily. On day 30 Next make a secondary starter. Secondary Starter Recipe Next we prepare another starter from the starter above. (You want to share don't you?) 1-1/2 cups starter (prepared above) 1 large can sliced peaches (with juice) 2-1/2 cups sugar & juice in a gallon jar. Stir once a day for 10 days: On the 10th day Add 2- 1/2 cups sugar & juice (you could use a 1 lb - 4oz can). Stir for ten days On the 20th Day Add 2 -1/2 cups sugar & juice & juice. (you could use a 14-1/2 oz to 15 oz can) Stir daily for ten days On the 30th Day Drain liquid from fruit. Divide the juice into 5-6 jars each containing 1-1/2 cups of juice. Give to friends and keep one for yourself. You friends can now start with the starter you have given them and make the 30-day cake directly. Divide fruit in thirds. You can freeze 2/3 of the fruit to use later. DO NOT STORE REFRIGERATED!! DO NOT PUT LID ON TIGHT, set it on top of jar - loosely! DO NOT PUT JUICE IN THE REFRIGERATOR! Finally - THE AMISH FRIENDSHIP CAKE Cake 1 yellow cake mix (without pudding in it) 2/3 cup oil 4 eggs 1/3 of the fruit (prepared with the starter above) 1- cup nuts - chopped 1 box vanilla instant pudding. Mix all ingredients together and bake in a greased Bundt pan at 350 degrees for 50 minutes or until done.
