Pumpkin Chocolate Chip Cookies
 
Pumpkin Chocolate Chip Cookies

1/2 cup shortening
1 cup sugar
2 eggs (beaten)
1 cup pumpkin
2 cups sifted flour
4 teaspoons baking powder
1 teaspoon salt
2 and 1/2 teaspoons cinnamon
1 to 2 cups chocolate chips (can substitute raisins instead of chocolate
chips)

Cream shortening. Add sugar gradually. Cream until light and fluffy. Add
eggs and pumpkin. Mix well. Sift flour, salt and cinnamon together.
Stir into pumpkin mixture and mix until well blended. Add chocolate chips
(or raisins). Drop by rounded teaspoons on greased cookie sheets 2 inches
apart. (do not flatten, keep them rounded) Bake at 350 for 12-15 minutes.

*Do not over bake.
*Check with toothpick after 12 minutes. These are cake like cookies and
will test clean with toothpick as a cake would.
*When the shortening/sugar is mixed together, it will look awful, like you
have made a mistake......But keep going.....It's not a pretty batter
before you get
the flour mixed in.
