Ice Cream Dream

Ice Cream Dream

15 servings

Hands on: 10 minutes
Total time: 10 minutes

Think of this fun dessert as an ice cream sandwich casserole.

12 neapolitan flavor ice cream sandwich bars
1 cup chocolate syrup
1 (6-ounce) jar maraschino cherry halves
1 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/2 teaspoon vanilla

To make whipped cream, combine heavy whipping cream, confectioners' sugar
and vanilla extract in mixing bowl. Whip with electric beaters until peaks
hold their shape. In an 8-inch-square pan or glass casserole, arrange half
the sandwich bars in a neat layer (you may have to cut one or two of
them). Lightly press the bars to push ice cream to edges. Drizzle with
about 2/3 cup
chocolate syrup and dot with half the cherries and some of the juice.
Spread with half the whipped cream. Top with another layer of sandwich
bars, press to edges, and then cover with remaining whipped cream.
Decorate top with remaining chocolate syrup, cherries and a little drizzle
of the cherry juice. Freeze until ready to serve.

Made famous by: Elaine Taylor of Tifton, who adapted it from another
recipe. "It's yummy, and everybody fights over the cherries," she said.

Tip: To dress it up, assemble the dessert in a pretty glass bowl (make
sure it's freezer-safe). "Serve it with a silver spoon, and it's just
gorgeous," Taylor said.
