Someone wanted chicken marengo.
* Exported from MasterCook * Chicken Marengo ( Today's ) Recipe By ![]() Serving Size : 4 Preparation Time :0:00 Categories : Ajc Chicken Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- rice, pasta or toast if desired 1 1/3 lbs boneless, skinless chicken breast halves 2 tsps olive oil 1 cup chopped onion 1/4 cup all-purpose flour 1/2 tsp salt 1/4 tsp black pepper 8 ozs sliced mushrooms 1 tsp bottled minced garlic 1 tsp dried basil 1 tsp dried parsley flakes -- optional 1/4 cup dry white wine or sherry 1 (28 oz can) petite diced tomatoes If rice or pasta is desired, cook it according to the package directions. Meanwhile, if the chicken is frozen, place the breasts on a microwave-safe plate and microwave, uncovered, on high, for 3 minutes to begin defrosting. While the chicken defrosts, heat the oil in a 12-inch, extra-deep nonstick skillet over medium heat. Peel and coarsely chop the onion, adding it to the skillet as you chop and stir occasionally. Cut the fresh or partially thawed chicken into bite-sized pieces. Place the flour, salt and pepper in a gallon-size, zipper-top bag; shake to combine. Add the chicken pieces; shake well to coat. Raise the heat to medium-high; add the chicken (and any extra flour mixture) to the skillet with the onions. Stir and cook until the chicken just begins to brown, about 2 minutes, then add the mushrooms. Stir and cook until the chicken is cooked through and the mushrooms have released their liquid, about 5 minutes. Add the garlic, basil, parsley (if using) and the wine. Stir and cook to mix well, about 1 minute more. Add the tomatoes and their juice. Continue to cook until the sauce begins to thicken slightly, about 1 minute. Serve over hot cooked rice or pasta, or with toast, if desired. Note: Large cans of "petite" diced tomatoes (tomatoes cut in smaller chunks) are available from several national brands. If you cannot find them, you may substitute a large can of chopped tomatoes. In the spirit of Dunand's desperation, our version of Chicken Marengo is similar to the original dish but features ingredients we generally have on hand: a bit of chicken, mushrooms, canned tomatoes and onions. We've left off the crawfish and eggs that today are still served as a "historical" garnish to the dish in some areas of Italy.
