Default Vietnamese Green Papaya Salad

Vietnamese Green Papaya Salad

Serves 2.

Salad
4 cups shredded green papaya or jicama to substitute
1 cup beef jerky (yes, you're reading that right beef jerky, do NOT use
the Slim Jim brand for this),
chopped into bite-size strips 1/2 cup crushed peanuts
1/2 cup chopped cilantro
juice of 1 lime

Dressing
all ingredients to taste
nuoc nam, Vietnamese anchovy sauce
rice vinegar
chili sauce
sugar
water

Mix all of the ingredients for the dressing, according to your taste.
Don't be thrown off by the anchovy sauce; it imparts a wonderful flavor.
Spoon out dressing on the bottom of the plate. On it, layer the papaya,
beef jerky, peanuts, cilantro and splash the top of the salad with lime
juice.
Enjoy!
