Cranberry Waldorf Salad
Cranberry Whipped Cream Salad Cranberry Creme Dream Salad These are for Kate Connally, who was asking for a Cranberry Waldorf Salad. Being a lover of canberry salads, I included a couple of my favorites. Cranberry Waldorf Salad 1 1/4 cup chopped cranberries, fresh or frozen 1 cup chopped red apple, unpeeled 1 cup chopped celery 1 cup seedless green grapes, halved 1/3 cup raisins 1/2 cup chopped walnuts 2 Tbsp sugar 1/2 tsp ground cinnamon 1 (8 oz) carton vanilla low-fat yogurt Combine first 7 ingredients. Toss. Mix cinnamon and yogurt and combine with all ingredients. Can garnish with frosted cranberries and mint leaves, if desired. Notes: In spite of the only 2 Tbsp sugar - this is a sweet salad. Cranberry Whipped Cream Salad 1 (16 oz) pkg cranberries, picked and ground 1 1/4 cup sugar 1 cup Tokay grapes, seeded and quartered 1/4 cup broken walnuts 2 cup whipped cream (suggest 1 container Cool Whip) 1 cup minature marshmellows (optional) Mix cranberries and sugar together and let stand over night. In the morning, add the remaining ingredients and refridgerate for 2 to 3 hours before serving. Dee.s Notes: This was one of our family.s favorite Thanksgiving salads. Cranberry Creme Dream Salad 1 pound fresh or frozen cranberries 8 ounces package miniature marshmallows 2 cups white sugar 1 (20 ounce) can crushed pineapple 1 sliced banana 1 cup whipped cream If using frozen cranberries let thaw before using. In a food processor or blender grind the cranberries. Add the sugar, crushed pineapple and marshmallows. Let mixture stand overnight. Just before serving stir in the sliced banana and whipped cream.
