Hearty Vegetable Beef Soup

10 1/2 ounces low-sodium chicken broth
1/2 cup water
2 cups chopped mixed vegetables (carrots, green
beans, onions, etc.)
16 ounces canned tomatoes --broken up
1 cup diced cooked beef
1 teaspoon thyme leaves --crushed
1/4 teaspoon salt
1 bay leaf
1 dash freshly-ground black pepper
2 ounces narrow-width noodles --uncooked

Heat broth and water. Add vegetables, meat, and seasonings. Bring to a
boil, reduce heat, and boil gently, uncovered, for 15 minutes. Add
noodles. Cook until tender, about 10 minutes. Remove bay leaf.
This recipe yields 4 servings.
