Scalloped potatoes are a favorite, and this recipe shows how you can enjoy them without the extra fat often found in traditional scalloped potato recipes. 8 medium potatoes, thinly sliced 1 large onion, chopped 2 tbsp. all-purpose flour Salt and pepper 2 cups hot low-fat milk 1 cup shredded fat-reduced Cheddar cheese Spray 13x9-inch baking dish with nonstick coating. Arrange one-third of the potatoes over bottom; sprinkle with half of the onion, then half of the flour. Season with salt and pepper to taste. Repeat layers; arrange remaining potatoes over top.
