Default Macaroons (revised)

MACAROONS (revised)

5 1/2 cups flaked coconut
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract
1 1/2 teaspoons almond extract

Preheat oven to 350 degrees.

In large mixing bowl, combine coconut, sweetened condensed milk and extracts and mix well.

Drop by rounded teaspoonfuls onto aluminum foil-lined and generously greased baking sheets. Bake 8 to 10 minutes or until lightly browned around the
edges. Immediately remove from baking sheets. Store loosely covered at room temperature.

Note: I baked up a batch of these last night, using a #40 scoop. I found that it was easier to combine the condensed milk and extracts
in a separate bowl and then combine them with the coconut, folding it all together with a spatula. Also, I ended up cooking them a total of 15
minutes, then browning the tops under the broiler.

Yield: 24
