Default Zucchini Boats

Zucchini Boats

6 medium zucchini
1-2 tomatoes
1 red onion
1 yellow bell pepper
cheese for melting on top - could be cheddar, Emmenthal, Gouda, or
Parmigiano-Reggiano
extra virgin olive oil

Wash zucchinis and halve. Scoop out insides, thus making a "boat".
Coarsely chop zucchini insides, onion and bell pepper in the food
processor. Chop tomatoes and mix together with rest of vegetables. Load
your "boats" with vegetable mixture and place in a baking dish that has
been slightly drizzled with a small amount of olive oil. Sprinkle the
boats with your favorite herbs. Bake at 350 degrees for 40 - 45 minutes.
Place cheese on the zucchini boats during the last 5 minutes of baking
time.
