Canadian Brown Sugar Oatmeal Scones
submitted by rosskat from NY, USA 3 cups uncooked oatmeal 3 cups flour 1 tsp baking powder 1 tsp baking soda 2 tsp salt 1 cup brown sugar 2 sticks cold butter or margarine 1/4 cup cold water or as needed Mix all dry ingredients in order listed . Cut in the shortening as for pie pastry. Add enough cold until a pliable dough consistency. Roll 1/2 inch thick on a floured surface. Cut into desired shapes. Place on ungreased baking sheets an inch apart. Bake 400F until golden, about 20 minutes. Yield depends on size cut. Serve warm with butter and jam.
