Chicken 'Basquaise' Style
 
Chicken 'Basquaise' Style

1 small chicken
2 pounds tomatoes
2 bell peppers
1 carrot
2 garlic cloves
A small bunch of your favorite fresh herbs (chives, parsley)
Salt and pepper to taste

Preheat the oven to 400°F. Cut the chicken into small pieces. Using a paper towel,
coat the bottom of a casserole dish with a drop of olive oil and place the chicken
in the casserole dish and into the oven. When the chicken is golden brown, add the
diced, peeled tomatoes, the carrot, the peppers and the minced garlic. Add salt and
pepper. Cover and cook in the oven for approximately 1 hour.
