Subject: Spaghetti Sauces wanted
There are two types of spaghetti sauces that my wife and I have been
spending the last ten years trying to duplicate and find. The sources
of the two sauces were a couple of Chattanooga Restaurants which after
very many lucrative and profitable years just closed doors almost
overnight without notice due mostly to political decisions that
happened by the Chattanooga City Commission. That said here are some
comments about the two.
Gulas Recipe: This sauce was served over large spaghetti noodles and
contained a touch of bell pepper in the recipe. The Sauce was a
Bolognese or meat sauce because the overall color of the sauce had a
distinct brownish color to it rather than the predominant reddish that
most tomato based sauces have and there was ample ground beed within
the recipe but it still had that tomato taste that punched through.
Possibly some onion also but i don't know Italian spices so have no
idea what spices they might have added.
Fenn's Recipe: When the city approved a new bridge that was being
built over the Fehn's restaurant that was the death of it's existence
as the owner said never, and he meant never. Their specialties was
not Spaghetti but they had the most unique Spaghetti sauce that I wish
I could taste again. The family was German and many of their recipes
had a slight German influence. The things I can remember about their
sauce was that the meat was much a lesser part of the make up of the
sauce and it was far more of a tomato base. The unique thing was that
it had a hot spicy taste to it. The taste could have been Cayenne
pepper or a Tabasco type sauce but the hotness was minor and wasn't
very profound at all but was just enough to tempt the taste buds in
knowing something was there.
Last: A regional cajun cook moved from New Orleans to the Muscle
Shoals area, when we lived there, and opened a very small restaurant
in a very poor location. He a single parent and this man could cook.
Best cajun food I ever ate anywhere at anytime especially his Bread
Pudding and Spaghetti sauce . Two of the things that included was a
Cajun spiced flavored Spaghetti sauce that i have no ability to
describe what it might have contained it was just heaven in your
mouth. A full fledged orgasmic feeling to your senses when you took
your first bite and that flavor experience held all the way through.
This guy could have patented this stuff but ended up moving back to
New Orleans. Even though I secured promises from him, that he would
write and give me his spaghetti sauce recipe even at the promise of
paying for it I never heard from him. This one I can't even start to
imagine how to began for I know little to none about cajun food and
spices to even start and try but if this person, this wonderful cook
is out there reading this please I would still love to have your
special pasta recipe or if anyone else has one they feel is awesome
please post it here also.
