Simple Carrot Ginger Soup
This is a thin-brothed carrot soup that takes about 5 minutes to make (but you need a juicer) it's low-fat but delicious teaspoon of minced garlic olive oil - just enough to get the garlic moving 2 cups of skim milk 1 1/2 - 2 cups of freshly juiced carrots fresh ginger -also juiced (as much as you prefer a couple pinches of crushed red pepper (to your taste) i like it spicy pinch of brown sugar pinch of pepper 2 pinches of salt fresh or dried basil Cooking directions: saute olive oil with garlic 2 minutes on medium heat - add skim milk and bring to boil 2 minutes. Add crushed red pepper, salt and pepper and brown sugar - stir briskly. Add carrot/ginger juice - then basil last..reduce heat one minute. That's it!
