Default Chipotle Pepper Chicken Soup

Chipotle Pepper Chicken Soup

1 lb boneless chicken breast
6 cup chicken broth
2 cup diced tomatoes
2 cup diced fresh cilantro
1/2 cup diced white onion
3 cloves diced garlic
2 tsp (or to taste) canned chipotle peppers in adobe sauce

In Dutch oven, cook onion and garlic in olive oil over medium heat about 4
minutes or until onion is tender. Add chicken and cook about 1-2 minutes.
Add chicken broth and chipotle peppers (diced). Bring to boil. Simmer
about 15 minutes or until chicken in done. Remove soup from heat, add
cilantro and tomatoes.
