Cinnamon Raisin Biscuits
Biscuits: 2 cups flour 2 Tbsp sugar 1 tsp salt 2 1/2 tsp baking powder 1/2 tsp baking soda 1/4 cup + 1 Tbsp shortening 1 cup milk 1/2 Tbsp cinnamon 2 tsp sugar 1/2 cup raisins frosting: 2 oz. cream cheese, softened 1/3 cup butter, softened 1 tsp vanilla 1 1/2 cups powdered sugar Preheat oven to 425 degrees. In a medium size bowl, sift together flour, 2 Tbsp sugar, salt, baking powder, and baking soda. Cut in cold shortening using a pastry blender, until pea size lumps are present. Gently stir in milk until dough resembles a very thick batter. In a small container, combine the cinnamon and the remaining sugar. Add the cinnamon sugar and raisins to the dough, and stir gently just until cinnamon is "swirled" throughout. This dough is very sticky and difficult to work with; placing it in the freezer until well chilled at this point will make it easier to work with. Place dough on a very heavily floured surface and press flat with well-floured hands. Fold in quarters and press flat 2 - 3 times. Cut biscuits with biscuit cutter. Bake 13 minutes or until light brown. Frost with cream cheese frosting while still warm. Cream Cheese Frosting: Combine softened butter and cream cheese with vanilla.
