Rol's Bouillabaisse
 
Rol's Bouillabaisse

Bouillabaisse basically is a French seafood stew. If you like seafood it
makes a great cold night family dinner. Its almost impossible to make just
enough for two, so plan on left-overs. This recipe will feed four. In our
stores you can buy what they call a fresh seafood combination. It consists
of fresh oysters, clams, calamari, baby shrimp, and fish however if this
is not available to your stores I will give you the substitutions below.
Note; In no case should you use pre-cooked shrimp; when cooked it will be
tougher than your grandmothers girdle.

6 Tbsp Butter or olive oil
1 cup Thinly sliced onions
1/2 cup Fine chopped celery
1 Med size Leek, white & light green part only cut in thin strips
2 Cloves mashed garlic
1 Can Chopped tomatoes with green chilies or plain with 1/2 cup sweet
chilies added
If you like it spicier, use one 10 oz can of Rot*tel tomatoes
1 Tbsp Dried parsley
1 Tbsp Fennel seeds
3/4 tsp Dried Thyme
2 Bay leaves
1/2 tsp Powdered Saffron
1 8 Oz Bottle of Clam Juice or fish stock
1 Can of beef broth, 14 oz
2/3 cup White wine
2 Tbsp Lemon or lime juice
2 tsp Salt
1 tsp Pepper

Saute the onions, celery, leeks, and garlic in the butter or olive oil.
Saute for about 2 minutes until onions are limp.
Add the tomatoes, chilies, Parsley, Fennel, Thyme, Bay Leaves, Saffron,
Clam Juice, and Beef Broth. Bring to a boil and then simmer uncovered for
10 minutes.
Add the seafood: Bring to a simmer for 5 minutes.
Either 1 lb of seafood combination described above plus 1 lb of uncooked
shrimp
OR
1 cup Fake Crab Meat
1 cup Clams
1 cup Fish of your choice
1 lb Uncooked shrimp
Fresh Mussels if available 10-12

Add salt, pepper, lemon juice, and white wine: bring to a simmer and cook
for 5 more minutes.
Can Be Served As Follows:
As is in soup bowls with plenty of French Bread
Over Rice
Over a slice of toasted French Bread
