Cheesecake Flambé

Your own favorite cheese cake recipe
OR
3 , 8 oz pkg cream cheese
2 cups sour cream
4 eggs
1 cup sugar
2 tsp vanilla
2 tsp fresh lemon juice
dash salt
1 can of cherry or blueberry pie filling or your favorite topping
Flambé:
1 Tbsp lemon extract

Here is my New Years dessert for this year. Just a twist on a standard
recipe. Happy New Year 2008 to all.!!!!

Dust a buttered 9 inch springform pan with graham cracker crumbs or use a
graham cracker- nut crust of your choice. Beat eggs with sugar until
fluffy. Beat room temperature cream cheese and sour cream with salt and
vanilla until smooth . Gently bend in the egg mixture. Pour into
cheesecake pan. Bake 350 F for crust fill pan and 325 F for no crust
filled pan and bake 45 to 60 minutes OR until cheesecake appears set.
Cool well and then chill for several hours- best over night . When well
chilled and ready to serve, add your topping .

To Flambé: When ready to serve: pour about one tablespoon lemon extract
over the topping. Ignite with a long match and let extract burn out.
Note: I am doing a cheese cake flambé for New Years. I never use a crust -
just dust the buttered pan with crumbs. One doesn't have to use lemon
extract either. . Warm up some rum or brandy instead and careful when you
flambé.
