Banana Bars: 1 cup granulated sugar 2 medium bananas very ripe (mashed) 1/3 cup vegetable oil 2 eggs 1 cup flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/4 teaspoon salt Cream Cheese Frosting: 1 -3oz package cream cheese (softened) 1/3 cup butter or margarine (softened) 1 teaspoon vanilla 2 cups powdered sugar Preheat oven to 350. Grease 13X9 inch pan on bottom and sides. In a large bowl mix together granulated sugar, bananas, oil and eggs. Stir in the flour, baking powder, baking soda, ground cinnamon, and salt. Spread into the bottom of the pan. Place in oven and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Allow bars to cool completely, approximately 1 hour. Meanwhile, in a medium bowl, mix cream cheese, butter and vanilla on medium. Once blended, slowly beat powdered sugar into mixture, making sure to occasionally scrape the sides of the bowl. continue to beat frosting until it is smooth and spreadable.
