Arroz con Dulce - Rice Pudding with Coconut
12 Cinnamon sticks powdered cinnamon small pieces of ginger 1 cup of rice 1/2 cup of sugar 1/2 raisins 2 cans of coconut milk 2 cups of water 1/2 tsp. salt Place a cup of rice in water for 2hours. Pour coconut milk and 2 cups of water, in a caserole and bring to a boil. Remove 1 cup of liguid and set aside. Pour in salt, rice and ginger. Lower heat and simmer stirring constantly. (season to taste w/salt) When liguid is drying up, pour in additional cup of liguid, raisins and sugar. Continue to stir until rice is tender and cooked and liguid is dried up. Remove pieces of ginger. Pour into paper plates and sprinkle powdered cinnamon. Time: Approximate 1 hour Enjoy! -- Rec.food.recipes is moderated by Patricia D. Hill at .
