Default Kiwi Fruit Medley

Kiwi Fruit Medley

Sunset

6 slices fresh or canned pineapple, quartered
3 fresh peaches, peeled, sliced
4 kiwi fruit, peeled, sliced
1/2 cup raspberries or strawberries
1/2 cup dry wine (optional)

Combine fruits and wine. Serve with Custard Sauce. Serves 4-6.

Custard Sauce:

11/2 cups milk, scalded
1/3 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt
3 egg yolks, beaten
1 teaspoon vanilla
1 tablespoon Cointreau or undiluted
orange juice concentrate

Mix sugar, cornstarch and salt. Pour in hot milk and stir until
blended. Stir in double boiler over simmering water till thickened.
Cook 2-3 minutes longer. Beat egg yolks till light and blend in hot
sauce. Return to double boiler and cook 2-3 minutes over hot water.
Remove from heat and stir in vanilla and Cointreau. Cool and chill.
