Black-Eye Peas with Smoked Turkey and Tomatoes 1 (16 oz) pkg black eye peas washed and soaked overnight 1 ( 14 oz) can diced tomatoes 1 medium onion sliced 1 lb smoked turkey legs 1 (49 oz) can low sodium chicken broth 2 bay leaves salt and pepper to taste Remove meat from turkey bones. Rinse and drained black eye peas and place in a 4 quart Dutch oven or crock pot. Add turkey, tomatoes, onion, broth, water, bay leaves and seasonings. If cooking in a Dutch oven bring to a boil, then reduce heat to low and simmer for 1 A1/2 hours or until beans are tender. Smash a few beans against the side of the pot to test for tenderness. * If using a crock pot, follow manufactureras directions for cooking beans.
