Kentucky Bourbon Cake
 
Kentucky Bourbon Cake

3/4 lb. (3 sticks)butter
2 1/4 cup light brown sugar
5 1/2 cup sifted all purpose flour
3 1/2 cup pecans
2 cup white sugar
6 eggs
1/4 tsp salt
1 tsp nutmeg
2 cup bourbon whiskey

Cream butter until soft in large mixing bowl.mix in white and brown
sugar,gradually work half the sugar mixture into butter keeping it as
smooth as possible in another bowl beat eggs until fluffy,then put in
remaining sugar until smooth mixture,stir into butter thoroghly.Mix
flour,salt and nutmeg together.Add flour combination and whiskey. Starting
and ending with flour. Break pecans into pieces and stir into batter. Pour
into well greased tube pan and bake in a pre heated oven at 300 degrees 1
1/2 to 1 3/4 hours or until cake shrinks slightly from pan. Allow cake to
cool 15 mins.then turn cake onto a cake rack cool completely. Cake
improves with age. It should be wrapped in foil and stored in the
refrigerator.
