Campbells Pepperpot Soup

Hi,

Whomever "Susan" was (the person who was interested in finding the
Campbell's Pepper Pot soup clone recipe) can just adapt the "Rosie's
Menudo" recipe posted on the newsgroup here on January 5, 2002 just by
replacing the can of Hominy found in the recipe with finely cubed potato
and carrot chunks plus orzo noodles like found in the Campbell's soup.

Tastes exactly the same as the Campbell's P.P. soup to me.

Rosie's Menudo

5 lbs. menudo (tripe)
8 cup water
3 Tbsp. oil
2 Tbsp. flour
2 Tbsp. chili powder
1 cup water
1/2 tsp. garlic powder
1/2 tsp. comino
1 1/2 tsp. oregano
1 Tbsp. salt
1 (29 oz.) can hominy (white)

Cut tripe into bite-size pieces. Trim excess fat. Rinse pieces
thoroughly. Place in a 6-quart pot with 8 cups water. Bring to a hard
boil. Cover and reduce heat. Cook for 1 hour and 45 minutes or until
tender. Remove from heat. Combine oil and flour. Brown flour over low
heat. Remove from heat. Add chili powder to flour and slowly add 1 cup
water to form paste. Pour paste mixture into pot containing tender tripe.
