Default Shrimp Salad In Shells

Shrimp Salad In Shells

Serves Four

12 large pasta shells
1 tablespoon virgin olive oil
2 cloves garlic, chopped
6 ounces cleaned, deveined shrimp
1/2 Walla Walla onion, finely chopped
1 medium tomato, finely chopped
1/8 teaspoon salt
1/2 cup sour cream or yogurt (non-fat works fine)
1/4 cup cilantro, stemmed and shredded
1 tablespoon calendula petals

Cook pasta according to package directions. As water heats, heat oil with
garlic over medium-high heat. Add shrimp and onion to pan and cook,
stirring, until shrimp are opaque (2 to 3 minutes). Add tomato and salt,
cover pan, reduce heat to low, set aside. Blend sour cream or yogurt with
the cilantro and the shrimp mixture. Drain cooked pasta, stuff with shrimp
mixture and serve, garnished with calendula petals.
